After a long time of 7 to 10 years the sturgeons have matured so far that we can remove caviar. Thanks to the natural environment and the cultivation in the wild our product becomes something very special.
The Caviar receives a wonderfully unique and nutty taste from the clean and mineral-containing water, our sturgeons are swimming in, that spoils every palate.
Our caviar is only mildly salted to preserve its naturalness. With a salt content of 3.3% it is called Malossol Caviar. Malossol is the Russian word for "little salted". Finally, the fresh caviar is packed in the classic blue Russian cans with the red rubber band and vacuumed so that it is stable for two to three months.
This delicacy should be enjoyed on ice with a mother-of- pearl, gold or horn spoon. Perfect with ice-cold vodka or champagne.

The sturgeon meat combines many qualities. It contains many important Omega3 fatty acids which have a positive effect on the cholesterol balance. Due to the nature of the sturgeon, this is a cartilaginous fish, the filet is absolutely boneless. This makes the fish a universal product in every kitchen. Due to the firmness of the meat which is comparable with the strength of monkfish, it is possible to use almost any method of preparation.
